simple chocolate cake


1 1/2 cups SR flour

1 cup sugar

4 tablespoons butter

2 tablespoons cocoa powder

1 teaspoon instant coffee

1/2 cup milk

2 eggs

1/2 teaspoon vanilla extract

Place all the dry ingredients into a bowl.   Put the milk and the butter into a saucepan and warm over a low heat until the butter is  melted.  Combine the butter and milk with the dry ingredients and add the vanilla and the eggs. Beat the mixture for 3 minutes until fluffy.  Pour the mixture into a greased and floured cake tin.  Cook in the oven at 180C (375F) for 30 minutes or until firm in the centre.  Remove from oven and let the cake cool in the pan before turning out.


chocolate icing

2 cups icing sugar

2 tablespoons cocoa powder

1 tablespoon butter

boiling water

Combine all ingredients except the water.   Add small amounts of water to the mixture until it’s a thick, creamy consistency.  Place the icing on top of the cake and leave to set.
