anzac biscuits

1 cup rolled oats

1 cup flour

1 cup  sugar

3/4 cup coconut

125g butter

1 tablespoon golden syrup

1 teaspoon bicarbonate soda

2 tablespoons boiling water

Combine the oats, flour, sugar and coconut.  Melt the butter and the golden syrup in a pan over a low heat.  Combine the soda and the boiling water,  it will bubble up.   Quickly add this to the butter mixture and stir it into the dry ingredients until they are combined.

Place heaped teaspoons on oven trays and press down lightly.  Bake at 150c (slow oven) for about 20 minutes or until golden brown. Cool biscuits on trays.  This recipe will make about 30 biscuits.

there is no substitute for butter in this recipe, margarine will change both the taste and texture

 aim for a flat crispy biscuit if you end up with soft little mounds add a little more water to the mixture

these little fellows freeze really well  and are a great standby to keep on hand
